Ivan Tea (Willowherb) is a genus of perennial plants in the willowherb family, which can be found everywhere in countries with a temperate climate. Of the 14 plant species, two are the most commonly used: broad-leaved willow tea and narrow-leaved Ivan tea. The first grows in the north of the northern hemisphere, including in the Arctic regions. Narrow-leaved willowherb is the most popular species that is widespread throughout Russia, occupying huge areas in the Urals and Altai. Ivan tea is called "fiery grass", "fireman", etc. in a different way. Also known as koporye tea.
Ivan tea narrow-leaved can grow up to 200 centimeters high. It has an upright stem covered with short wedge-shaped leaves. The flowers of the plant are usually pink and are collected at the top in a lush cluster.
Since ancient times, it has been known to the inhabitants of Eurasia, Canada and North America. In Russia, the first mentions of a drink made from Ivan tea can be found in the manuscripts of the 12th century. According to legend, Alexander Nevsky went to the fortress after a battle with a crusader regiment and tasted a drink made from the plant for the first time. He was surprised that he fell asleep like a baby, and the next morning he was happy and full of energy. He assessed the healing properties and ordered all soldiers to drink Ivan tea. Nevertheless, the production of koporye tea began at the time of Catherine II. Later, it became popular not only in Europe, but also in Asia.
Ivan tea has a rich chemical composition. It includes phosphorus, potassium, manganese, calcium, titanium, zinc, sodium, copper, magnesium, selenium, iron, molybdenum, boron.
Preparation: per cup (approx. 300 ml) 2g (~ 1 tsp) – water temperature 80°C – brewing time 5-10 min.
Ingredients: narrow-leaved willowherb (fermented).
